L'Atelier de Cathou
37 B Grande Rue, 70100 Velesmes-Échevanne
L'Atelier de Cathou offers Comté bricelets, Comté bricelets with onions, linseeds and poppy seeds, as well as vanilla biscuits.
Bricelets, or ‘Bretzeli’, most certainly originate from Switzerland, where they have been made for several centuries. They are thin, crispy, dry waffles that come in both sweet and savoury varieties. In our region, they are also known as ‘oublie’. My recipes are traditional and were passed down to me nearly 50 years ago by people who, in turn, had learnt them from their parents. Bricelets are round, sometimes uneven in shape, and vary in size. This depends on the thickness of the batter and the artisanal production method: the small balls are shaped and baked by hand, whilst the sweet batter is spread with a spoon. I make them myself, and their shape can also depend on the cook’s mood… My entire range is made using high-quality ingredients: - Butter, cream and Comté cheese from the Chevigny dairy and the Société Fromagère Val d’Amour in Ounans - Flour from the Moulin de l’Eau Vive in Lavoncourt - Salt sourced directly from the Guérande salt marshes You can find my bricelets in the following shops: Localerie Grayloise – Gray Localerie Pesmoise – Pesmes L’atelier d’huile de noix – Denèvre Carrefour Contact – Fresne-Saint-Mamès And from my home by contacting me by telephone on 06 07 98 60 12.
