Lucie Gaillard and Simon Rivaud moved to the Gâtine region in July 2022. They have started a dairy sheep farm. They built their own sheep shed to house their 320 dairy ewes. They chose the Lacaune ewe, a hardy dairy breed native to the south-west of the Massif Central. The ewes graze outdoors in the meadows surrounding the farm. Milking takes place in the morning and evening. The morning’s milk is processed in the cheese dairy right next door by Lucie. Every day, she turns the milk into delicious dairy products: yoghurt, fresh or mature cheeses, tommes… These products are available for sale at the Parthenay market on Wednesdays and the Saint-Maixent-l’École market on Saturdays, and at the farm in their lovely shop, which is open on Wednesdays and Fridays from 3 pm to 6.30 pm.
